One Hour Bread

Makes 2 loaves

5 1/4 cup flour (Bread flour is best or add 2 Tablespoons gluten)
1/4 cup sugar or honey
1/2 T salt
1 1/2 T (maping) instant yeast (SAP)
1 1/2 T lecithin
2 cup hot water
2 T dough enhancer

Mix flour, sugar, salt and yeast in mixer. Add lecithin and hot water. Mix, then knead in mixer 5 min. Shape into loaves. Let rise 25 min. Bake at 350 for 25 min.

Potato Cauliflower Soup

Serves: 6
Preparation time: 35 min.

4 med potatoes
1 med head of cauliflower
1 med onion
1 peeled carrot
enough water to cover potatoes

From food storage:
canned chicken
dried diced onions
dried chopped carrots

Peel and cut into bite sized pieces 4 potatoes. Clean and divide cauliflower into small sections. Peel and dice 1 med onion. Dice carrot finely. Boil potato in just enough water to cover. Boil or microwave cauliflower, onion, and carrot just until cauliflower is tender. Use as little water as possible. Wen potatoes are tender, mach lightly, leaving some chunks left unmashed. Do not drain water. This is what makes the soup think.
Add the cauliflower, onion, and carrot. Add salt and patter to taste. (I like a little garlic powder also).
If soup is too thick, add a little more water. Simmer for about 25 minute more.


Poor Man's Cake (no eggs)

Depression Era recipe

Serves 8

1 cup water
1 cup sugar
i cup raisins
1/2 cup shortening
1/2 tsp. cloves or all spice
1/2 tsp. nutmeg
1 tsp. cinnamon

Bring to a boil in pan. Cool pan in sink with cold water. Stir in 2 cups flour with one level tsp. baking soda. (sifted). Grease loaf pan . Bake 40 minutes at 350.

delicious with vanilla ice cream or shipped cream and apple sauce.
